Parents can go crazy trying to get their children to eat their veggies. Luckily this smoothie recipe will not only get them to eat their veggies, but it will make them beg for them. Pull out your blender and give it a try—you can’t even taste the spinach!

Ingredients
6 fl. oz. frozen orange juice concentrate
1 banana
6 frozen strawberries
1/2 cup frozen blueberries
1/2 cup low fat yogurt in any flavor
4 cups baby spinach leaves
water

Place frozen orange juice concentrate, banana, strawberries, blueberries, and yogurt in the blender. Fill the rest of the blender up with baby spinach leaves and then add enough water to cover the bottom third of the blender. Place the cover on the blender and blend until completely smooth. If needed, add a little bit more water to help with the blending.

You can serve the smoothie immediately or freeze it into popsicles for your kids to eat later. You can also freeze it in a leak proof cup and send it to school. It will keep the rest of your kid’s lunch cool and be defrosted enough by lunch to drink it.

Tips:
You can also experiment with your own ingredients to find out what your family likes best. Adding a can of pineapple adds an amazing tangy flavor. Raspberries are also good if you don’t mind the seeds. The strawberries and banana do a wonderful job of totally masking the spinach flavor. The blueberries get rid of the weird brown color you get when you mix spinach with strawberries. If you don’t like bananas, try substituting with mangos. If you like, you can even freeze your spinach so that you always have it on hand when you need it.
