Here is a fun twist on the Popsicle. Not only are they super easy to make, but they are a healthy and delicious way to cool down this summer! And the variations are endless. This Fourth of July, try using strawberries, bananas, and blueberries with some drizzled white chocolate. Or if your children are learning their colors, you can make rainbow kabobs with strawberries, peaches, pineapple, kiwi, blueberries, and purple grapes.

First you will need to rinse and slice up your fruit. You can use wooden skewers and just cut them in half. If you have a good pair of kitchen shears, just make a mark with them in the middle of the skewer and then break it in half with your hands. If your fruit is soft (which most fruit is) then they will skewer even without the pointy end. And then if you have smaller, less careful kids, you can give them the skewers without the point.

Your kids can help you skewer the fruit and then they can make their favorite combinations. Place on a tray lined with parchment paper. You could stop here and freeze them. But for an extra delicious treat drizzle with chocolate! You can use melted Nutella or any other kind of melted chocolate. Just put it in a baggy, cut the corner and let your kids drizzle it on.

Place in the freezer for a couple of hours and then you can eat them! To store, remove from the tray and place in a freezer-safe container. They should stay good for a month or so (if they last that long). When you are ready to eat them, they are a bit easier to eat if they have sat out for a couple of minutes just to soften a bit. Enjoy!
