A healthy side dish or desert, this recipe is the perfect healthy, comfort food. Sweet potatoes not only pack lots of vitamin A and C, but they also have twice as much fiber as regular potatoes.

Ingredients

  • 3 sweet potatoes
  • 1 TBL date sugar
  • 1/2 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 TBL milk (or soy milk)

Topping

  • 2 TBL Date Sugar
  • 2 TBL Oats
  • 2 TBL chopped pecans
  • 2 tsp melted butter

Instructions

  1. Cook sweet potatoes by adding them to an oven safe dish and cooking for 90 minutes at 350 degrees.
  2. When sweet potatoes are cooked, scoop out flesh into a bowl, and add the date sugar, cinnamon, ginger, and nutmeg. Mix with a hand mixer until well incorporated and fluffy.
  3. Scoop into small pie dishes or ramekins. Mix topping ingredients in small bowl, and sprinkle on top of sweet potatoes. Bake at 350 for just about 10-15 minutes, or until pecans get toasty.
